The bakery’s story begins in 1977, when Maria Cholakis’s father and uncle opened one of the first New York-style diners in Vienna, Virginia. Following a tradition among diners in the Northeast, they employed an in-house pastry chef whose creations quickly became local favorites. “Our desserts became so popular that customers started requesting whole cakes and pies for special occasions,” Maria recalls. As demand grew, the family recognized an opportunity to expand, opening a dedicated retail bakery in their adjacent shopping center.
The name “Amphora,” referring to the ancient Greek vessel used to store precious commodities like olive oil and wine, was chosen to honor the family’s Greek heritage. This connection to tradition remains evident in their offerings today. “We made sure to carry on family traditions by continuing to offer my father’s beloved cheesecake recipe,” Maria shares. “We also incorporated cherished Greek family recipes, including melomakarona and kourabiedes, which have remained customer favorites. Our baklava has become one of our signature items, with many customers telling us it’s the best they’ve ever had.”
Maria’s own journey with Amphora mirrors the bakery’s evolution. Starting in various roles – server, hostess, cashier – she eventually took a break to pursue higher education and a law career in New York. “However, I found myself missing the creativity and personal connections I had experienced at the restaurant and bakery,” she explains. That passion ultimately brought her back to Amphora, where she could blend her business experience with her love for baking and customer service.
When Amphora relocated to Herndon, the move brought unexpected opportunities to connect with a new community. “We found ourselves next to a children’s gymnastics center,” Maria recalls with a smile. “Unlike our Vienna location, we were suddenly surrounded by young families and energetic kids.” This inspired the bakery to expand its offerings, creating treats like cake pops and other child-friendly desserts to cater to their young neighbors.
Today, Amphora Bakery’s expansive menu features everything from traditional European pastries to elaborate custom cakes, with options to accommodate every dietary need. With advance notice, they offer dairy-free, sugar-free, gluten-free, and vegan options, ensuring no one has to miss out on life’s sweet moments. Their most popular items include the Fruit Bavarian, topped with fresh fruit and filled with Bavarian cream and raspberry preserves, and the Berry Bliss cake, showcasing fresh berries and whipped cream. The bakery has become especially known for its wedding cakes, creating lasting memories for countless couples. “We have customers who ordered their wedding cakes from us 20 years ago who still come back every anniversary to order a replica of their top tier,” Maria says proudly. “Being part of these continuing celebrations is truly special.”
Prior to COVID-19, Amphora was known for its engaging bakery parties and hands-on workshops that brought the community together. While they’ve had to adapt during the pandemic, they’re gradually reintroducing these beloved events, starting with their popular Gingerbread Workshops. “We’re currently searching for the perfect cake decorator who’s great with kids to help lead these workshops,” Maria notes. Until workshops fully resume at Amphora, they offer at-home party kits complete with all the materials needed for a special decorating experience.
One of the most rewarding aspects for Maria is seeing the continuation of Amphora traditions across generations. “Some of the children who once attended our workshops are now bringing in their own kids,” she shares. “That sense of connection, of being part of our customers’ lives across generations, is what makes this work so meaningful.”
Today, Amphora’s team of sixteen dedicated professionals, including managers, an Executive Pastry Chef, skilled bakers, and talented decorators, work tirelessly to maintain the bakery’s high standards. Each day brings new challenges and creative opportunities, from crafting fresh pastries to designing elaborate custom cakes for special occasions.
Looking ahead, Amphora continues to evolve while staying true to its roots. “We’re excited to expand our dessert offerings by incorporating more flavors of Greece and other Mediterranean countries into our bakery,” Maria shares. “We’re working on new recipes that celebrate the unique and vibrant tastes of the region, adding a fresh dimension to our menu.”
